Yu Sheng (New Year Raw Fish Salad)

Specially created for Malaysian-Singaporean Students' Association's Chinese New Year Dinner, this festive and colourful fish salad is tossed for luck and good fortune in the coming year. A bed of smoked salmon is surrounded by freshly grated vegetables, crispy wonton skin and ikan bilis, and is completed with a drizzle of sesame oil and plum sauce.
